Many a cold mornings were filled with the aroma of just fried hot donuts mingled with my parent's coffee and my chocolate. |

RAISED DONUTS |
Note from Rremmick-Hubert:
The following two reciepes were used by my mother, Lillian, nee Hein, Remmick, and, now by the both of us. |
3 cups milk
1/2 cup butter, plus , extra butter to place in pans later 1 cup white granulated sugar 3 teaspoon salt 2 medium size eggs 1/2 cup lukewarm water 4 cakes yeast 10 cups flour [ sometimes one needs a little less, sometimes a little more depending on the size of eggs used]... - After deep fried use: 1 lunch bag filled with 1 cup sugar and teaspoon of cinnamon.... |
Scald milk [bring to point before boiling] and place in a
large mixing bowl
Add sugar , salt and butter to the hot milk Let mixture cool Meanwhile, take a cup and fill it with the water and yeast to soften Break the eggs in a cup and lightly beat Return to mixture in large bowl and add 5 cups of flour and mix until smooth Add the yeast mixture and 1 cup flour and mix Add the egg mixture and mix Add 3 1/2 cups of flour to form a stiff ball of dough [add the final 1/2 as needed to form ball] Lightly flour a bread board or marble slab. Place flour ball on the board and kneed until smooth Place dough into a lightly buttered bowl Let the dough rise in a warm place [I place it in my oven with the door slightly ajar so the light remains on until it's doubled it's size After the dough has risen, punch the dough down rub the top of the dough with cool melted butter to prevent the dough from sticking to lid or towel on bowl Place dough into refrigeration and let it raise.... The dough can remain in refrigerator for several days When ready to bake the rolls / donuts, remove the dough needed from bowl Lightly butter the bread pans to prevent sticking Kneed with gentleness [the less touched the higher the bread will rise] on lightly floured board or marble slab Roll dough to about 1/4 inch think on lightly floured board or marble slab Let donuts raise for about 1 to 2 hours so they double their size Fry the raised donut in deep fat kettle or fryer for about 1 minute [until golden brown] Remove from kettle with slotted spoon Place on paper towels to rid the access oil Take a paper bag [lunch bag size] and place in it 1 cup sugar and 1 teaspoon cinnamon. [Add more as needed]. Place the warm donut into the bag and shake lightly to coat the donut then place on a platter. [Note: If the donut is too cold the sugar coating doesn't work as well]. Best served with cold milk or coffee or hot chocolate or cold / hot cider....
If you are not making all the dough into donuts use the remainer for other breads: Shape the dough: Shape into loaf pans....braid it, roll three walnut size and place in cup of cupcake pan... Roll it 1/4 inch thick and place in bottom of cake pan and use for bottom of coffee cake.... Your choice .... Let dough rise [about 1 hour] in a warm dry place Set oven for 425 degrees F for 15 to 20 minutes before placing raised dough in oven to bake Place on top the coffee cake mixture to make coffee cake Bake dough for about 15-20 minutes, until golden brown Remove from oven Lightly brush top of bread with butter if for rolls and braided bread.

Baking Powder Donuts |
2 eggs
1cup sugar 1 cup milk 1/3 cup melted butter [cooled] 4 cups white unbleached sifted flour 4 teaspoons baking powder 1/4 teaspoon powered nutmeg 1/4 teaspoon powdered cinnamon1/2 teaspoon salt
To Place on Donuts after they are removed from deep fryer: Sugar and powdered cinnamon mixed as you so desire You can use white power sugar in it's place or make a frosting of any color or taste [lemon, banana, strawberry, vanilla.....] or nothing at all..... |
Beat the eggs then gradually add the sugar ...beat until creamy
Add th mil and the cooled butter Sift flour, baking powder and spices plus the salt Stir in the creamy egg mixture Cover the mixed dough with wax paper and place in refrigerator to chill for one hour Set up the deep fryer or kettle with oil Fill the fryer or kettle with oil [your preference, [I like Crisco veg. oil] to depth [no more than half] that is safe when the dough is placed into the oil because too much oil will boil over and fires can result......Prevent accidents from happening. Small children watching can be seriously burned by the steam rising from the dough boiling in the oil and spilled kettles can result in splashing or cover a child and death can occur. So, be careful! The temperature of the oil should be about 370 degrees F [this will brown a 1-inch cube of bread in less than a minute]. Return to the dough. Roll the dough out on a lightly floured board or marble slab, which I prefer, so it is about 1/4 inch thick Cut the donuts with a donut cutter. If you don't have a donut cutter used for the outside the mouth of a large water glass and for the center a shot glass... Lower dounut slowly into the hot oil, fry both sides until golden brown Use a large slotted [with holes to let the oil escape] spoon to pull out the donuts from the oil Place the donut on platter covered with paper towels to absorb access oil Take a sifter with the mixed sugar and cinnamon and shake over hot donuts. Serve.
