RECIPE #1
Pfeffernusse Cookies
INGREDIENTS
3 cups sifted all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cloves
2 tablespoons ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon orange zest
1 cup chopped walnuts
4 eggs
2 cups white sugar
PREPARATION:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Sift together flour, baking powder, cloves, cinnamon, and nutmeg. Stir in the orange rind and nuts.
3. In a medium size bowl, beat eggs and sugar until thick. Blend in flour mixture to make a smooth dough.
4. Roll dough into 1 inch balls, place onto ungreased baking sheets and bake in the preheated oven for 15 minutes, until light brown.

These cookies are very popular with Low Germans during Christmas:
Pfeffernusse
1 cup of ole or butter
2 C white sugar
2 C brown sugar
4 eggs
1 T. soda in one T of water
3/4 tsp anis oil
Add:
1 t cream of tartar
1 t. powdered or ground cloves
1 t. nutmeg
1 t. cinnamon
1 t. mace
Roll in small rolls about 1/2 to 3/4 inches across. Cut into pieces about 1/2 in long.
Bake at 375 deg. for 6 to 8 min.
Store in a tight glass jar. These improve with age.
