Whie Sour Dough Bread

PLAIN YEAST WHITE BREAD
RECIPE

1 tbs butter or margarine or shortening
2 tbs sugar
2 1/2 tsps salt
1 c. scalded milk
1 c. hot water
1 cake lukewarm water
6 c .sifted white unbleached flour
1 tbs butter or shortening or margarine for greased bowl

Place 2 to 3 tbs of flour on a bread board

Scald the milk and add the 1 c hot water, sugar, salt

Place the yeast cake into the 1/4 c lukewarm water so it will
soften
-
Add 3 cups of the flour and beat thorougly with a spoon

Add 2 more cups of flour and mix well.

Add a little more flour so it isn't sticky
-
Place the dough onto the floured board and knead with your hands
until mixture is smooth and elastic to the touch
-
Bubbles may be seen under the surface
-
Grease large mixing bowl and place the dough into the bowl.

Cover the bowl

Let stand in a warm place until it doubles in size
-
After the dough has doubled cut it with a knife and turn the dough
over and over several times

Grease pans you plan to use
-
Part the dough and shape as you desire into rolls or loafs of
bread
-
Let the dough raise until it's about doubled in size
-
Meanwhile, start oven at 375 degrees to 400 degree
-
When dough has risen place in oven and bake. Rolls will take
about twenty minutes and loafs will take longer, maybe thirty-five to forty
minutes, or until brown
Variations:

You can add 1/3 c. of dried currants in loafs after the first rising
of the dough

You can add 1 c .of raisins with 1/2 c of sugar

You can add 1 c. seedless raisins and 1 c broken walnuts or
pecans
-
You can add 1 c. crushed spanish peanuts with 1/2 c sugar and several
tsps. of cinnamon
